My tungsten-carbide sharpening tools are engineered to automatically align themselves to suit the edge angle of all plain-edged knives, even asymmetrically ground Japanese knives. What’s more, they are specially shaped to allow resharpening of dull blades & honing of sharp ones depending on how you hold the knife in the sharpener. Clever, eh? To sharpen blunt knives, pull the knife through the sharpener from heel to tip 3-5 times, with the balde tip pointing down. To hone a freshly-sharpened edge and for regular maintenance of your knvies, gently pull the knife through from heel to top 3-5 times, but with the blade tip tilted upwards. What’s the difference between honing & sharpening? Honing a blade gently straightens any microscopic kinks & bumps in the edge that occur during day-to-day use. Regular honing keeps a knife sharper for longer. If your knife no longer cuts with ease, or you want to bring an old favourite knife back to life, sharpening removes material from either side of the blade to recreate the original fine cutting edge.
